Fail-proof pancake batter (perfect texture)

Batter that’s too thin leaks out of shapes; too thick and the center stays raw. This is the HappyMoule base we use with dinos, hearts, and stars.
Ingredients (about 12–16 shapes depending on mold)
- 200 g all-purpose flour
- 2 medium eggs
- 300 ml milk (or unsweetened plant milk)
- 1 tbsp sugar (optional)
- 1 tsp baking powder
- Pinch of salt
- 20 g melted butter or 1 tbsp neutral oil
- 1 tsp vanilla extract (optional)
Method: 5 minutes + rest
- Whisk eggs, milk, sugar, vanilla, and fat.
- Sift flour, baking powder, and salt; rain them in and whisk just until combined.
- Rest 10 minutes so flour hydrates and bubbles settle.
- Ideal texture coats a spoon without running like water.
Cooking with silicone molds
Preheat the pan to medium-low. Lightly oil the pan, set the mold flat, fill each cavity ¾ full (batter rises). When the top looks set and bubbles pop, flip gently or lift the mold if the shape holds on its own.
Typical timing: 2–3 min first side, 1–2 min second. If the bottom burns before the center sets, lower the heat — silicone insulates a bit more than a bare pan.
Variations
- Buttermilk: swap 100 ml milk for yogurt plus a splash of milk.
- Dairy-free: oat milk + oil.
- Extra fluffy: fold in one stiff egg white just before cooking.
Common mistakes
- Over-whisking → elastic gluten, rubbery pancakes.
- Filling to the brim → overflow and blurry shapes.
- Heat too high → bitter crust, sticky center.
- Unmolding too early → broken dino legs or star points.
Refrigerate batter up to 24 h (well covered). Stir gently before reuse — baking powder already started working; don’t whip it back to life aggressively.
